Carrot Cake Muffin with Vanilla-Chai

Dry Ingredients:

Wet Ingredients:

  • 2 large eggs (or 2 flax eggs: 2 tbsp flaxseed meal + 6 tbsp water)
  • 1/4 cup melted coconut oil
  • 1/2 cup coconut sugar
  • 2 tbsp maple syrup
  • 1/4 cup almond milk
  • 1 tsp vanilla extract

Add-ins:

  • 1 1/2 cups grated carrots (2-3 carrots)
  • 1/2 cup chopped walnuts (optional)

Coconut Cream Frosting:

  • 1/2 cup chilled coconut cream
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract

Garnish (optional):

  • Grated carrot
  • Chopped walnuts

Method:

  1. Preheat your oven to 180°C (350°F) and line a 12-cup muffin tin with paper liners. Lightly grease the liners if desired.
  2. In a large bowl, mix almond flour, oat flour, protein powder, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, whisk eggs (or flax eggs), coconut oil, coconut sugar, maple syrup, almond milk, and vanilla until smooth.
  4. Add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. Gently fold in the grated carrots and walnuts.
  6. Divide the batter evenly into the muffin tin, filling each cup about 3/4 full.
  7. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Cool for 5 minutes in the tin, then transfer to a wire rack.
  8. To make the frosting, whip the coconut cream with maple syrup and vanilla until fluffy.
  9. Once the muffins are fully cooled, top with the frosting and garnish with grated carrot and walnuts if desired.
