- 1 cup oat flour
- 1/2 cup KAILO Nutrition Vanilla-Chai Protein Powder
- 3 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground ginger
- Pinch of sea salt
Wet Ingredients:
- 2 large eggs (or 2 flax eggs: 2 tbsp flaxseed meal + 6 tbsp water)
- 1/4 cup melted coconut oil
- 1/2 cup coconut sugar
- 2 tbsp maple syrup
- 1/4 cup almond milk
- 1 tsp vanilla extract
Add-ins:
- 1 1/2 cups grated carrots (2-3 carrots)
- 1/2 cup chopped walnuts (optional)
Coconut Cream Frosting:
- 1/2 cup chilled coconut cream
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract

- Grated carrot
- Chopped walnuts
Method:
- Preheat your oven to 180°C (350°F) and line a 12-cup muffin tin with paper liners. Lightly grease the liners if desired.
- In a large bowl, mix almond flour, oat flour, protein powder, baking powder, cinnamon, nutmeg, ginger, and salt.
- In another bowl, whisk eggs (or flax eggs), coconut oil, coconut sugar, maple syrup, almond milk, and vanilla until smooth.
- Add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Gently fold in the grated carrots and walnuts.
- Divide the batter evenly into the muffin tin, filling each cup about 3/4 full.
- Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Cool for 5 minutes in the tin, then transfer to a wire rack.
- To make the frosting, whip the coconut cream with maple syrup and vanilla until fluffy.
- Once the muffins are fully cooled, top with the frosting and garnish with grated carrot and walnuts if desired.
