Ingredients:

For the Cake:

  • 1 1/2 cups almond flour
  • 1/2 cup oat flour
  • 1/3 cup coconut sugar
  • 1/3 cup melted coconut oil
  • 3/4 cup unsweetened almond milk
  • 2 eggs (or 2 flax eggs for a vegan option)
  • 1/2 cup Vanilla-Chai Plant Well
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of sea salt

For the Cinnamon Swirl:

  • 3 tbsp coconut sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp melted coconut oil
  • 1 tsp almond milk

For the Icing:

  • 1/2 cup powdered icing sugar
  • 1-2 tbsp almond milk

Method:

  1. Preheat your oven to 180°C (350°F). Grease and line a loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together the almond flour, oat flour, protein powder, baking powder, ground cinnamon, and salt.
  3. In a separate bowl, mix the melted coconut oil, almond milk, eggs, vanilla extract, and coconut sugar until smooth.
  4. Gradually add the wet ingredients into the dry ingredients, stirring until combined. Avoid overmixing.
  5. Pour the batter into the prepared loaf pan.
  6. In a small bowl, mix the ingredients for the cinnamon swirl until smooth. Drizzle the cinnamon mixture over the batter, and use a knife to create a swirl effect.
  7. Bake for 40-45 minutes, or until a skewer inserted into the center comes out clean. Let the cake cool completely in the pan before removing.
  8. For the icing, whisk the powdered icing sugar with almond milk until smooth. Drizzle over the cooled cake.
  9. Slice and enjoy this cozy, protein-packed cake bread with the perfect cinnamon swirl and a light drizzle of icing!
