Cinnamon Roll Cake Bread with Vanilla‑Chai

Warm, nostalgic, and just a little indulgent—this Cinnamon Roll Cake Bread brings all the comfort of your favourite bakery treat with a nourishing Vanilla Chai twist.

Infused with warming spices and powered by plant-based protein, this loaf is soft, subtly sweet, and swirled with cinnamon goodness in every bite. It’s perfect for slow mornings, afternoon tea, or as a better-for-you dessert that still feels like a treat.

Made with wholesome flours, coconut sugar, and our Vanilla Chai Protein, it’s a cosy staple you'll want to make on repeat—especially as the cooler weather rolls in.

Serves: approx 8 slices

Ingredients:

 

For the Cake: 

• 1½ cups almond flour

• ½ cup oat flour

• ⅓ cup coconut sugar

• ⅓ cup melted coconut oil

• ¾ cup unsweetened almond milk

• 2 eggs (or 2 flax eggs for a vegan option)

• ½ cup Vanilla‑Chai Protein Powder

• 2 tsp baking powder

• 1 tsp vanilla extract

• ½ tsp ground cinnamon

• Pinch of sea salt

 

For the Cinnamon Swirl:

• 3 tbsp coconut sugar

• 1 tbsp ground cinnamon

• 2 tbsp melted coconut oil

• 1 tsp almond milk

 

For the Icing:

• ½ cup powdered icing sugar

• 1‑2 tbsp almond milk

 

Method: 

 

1. Preheat your oven to 180°C (350°F). Grease and line a loaf pan with parchment paper.

2. In a large mixing bowl, whisk together the almond flour, oat flour, protein powder, baking powder, ground cinnamon, and salt.

3. In a separate bowl, mix the melted coconut oil, almond milk, eggs, vanilla extract, and coconut sugar until smooth.

4. Gradually add the wet ingredients into the dry ingredients, stirring until combined. Avoid overmixing.

5. Pour the batter into the prepared loaf pan.

6. In a small bowl, mix the ingredients for the cinnamon swirl until smooth. Drizzle the cinnamon mixture over the batter, and use a knife to create a swirl effect.

7. Bake for 40‑45 minutes, or until a skewer inserted into the center comes out clean. Let the cake cool completely in the pan before removing.

8. For the icing, whisk the powdered icing sugar with almond milk until smooth. Drizzle over the cooled cake.
