Serves: 10‑12 cookies
Ingredients:
• 1½ cups rolled oats
• ½ cup oat flour
• ⅓ cup coconut sugar
• ⅓ cup raisins
• 1 scoop Plant Well Vanilla Chai Protein Powder
• ¼ cup melted coconut oil
• 1 flax egg (1 tbsp flax meal mixed with 3 tbsp water, left to thicken for 5 minutes)
• ¼ cup unsweetened almond milk
• 1 tsp cinnamon
• ½ tsp baking powder
• Pinch of sea salt
Method:
1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the rolled oats, oat flour, coconut sugar, raisins, protein powder, cinnamon, baking powder, and sea salt.
3. In a small bowl, mix the flax egg, melted coconut oil, and almond milk. Let sit for 1‑2 minutes to ensure the flax egg thickens properly.
4. Pour the wet ingredients into the dry ingredients and mix well until a cookie dough forms. If the dough seems too dry, add a little more almond milk, 1 tablespoon at a time.
5. Scoop the dough using a tablespoon or cookie scoop and place onto the prepared baking sheet, leaving some space between each cookie. Flatten slightly with the back of a spoon.
6. Bake for 12‑15 minutes, or until the cookies are golden brown around the edges.
7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
8. Serve and enjoy these chewy, protein‑packed cookies that are perfect as a snack or a post‑workout treat.
