Baked Chocolate + Raspberry Protein Oats

Baked Chocolate + Raspberry Protein Oats

Serves:
6–8

Prep time: 10 mins

Cook time: 30–35 mins

Ingredients:

1 ½ cups whole oats
1 ½ cups milk of choice (almond, oat, dairy, etc.)
¼ peanut butter (or any nut / seed butter)
¼ cup dark chocolate chips
¼ cup chia seeds
1 scoop protein powder (I used Plant Well Vanilla Chai )
½ cup filtered water
½ cup frozen raspberries (for topping)
2 tbsp low-fat Greek yogurt / or coconut yogurt (for dairy free option)


Instructions:

  1. Preheat your oven to 180°C (350°F) and lightly grease a baking dish (approx. 8x8 inch)

  2. In a baking dish or bowl, combine oats the milk of choice, chia seeds, nut butter; chocolate chips protein powder + filtered water. Whisk in the protein powder until smooth and combined.

  3. Let the mixture sit for 5–10 minutes so the chia seeds can start absorbing the liquid, this helps with texture.

  4. Evenly sprinkle the frozen rasberries on top.

  5. Bake for 30–35 minutes, or until the top is golden and the oats are set.

  6. Let cool slightly before slicing into 6–8 squares. Serve warm or cold with 2 tbsp of low-fat Greek yogurt on top.
