Baked Chocolate + Raspberry Protein Oats

Serves: 6–8

Cook time: 30–35 mins
Ingredients:
1 ½ cups whole oats
1 ½ cups milk of choice (almond, oat, dairy, etc.)
¼ peanut butter (or any nut / seed butter)
¼ cup dark chocolate chips
¼ cup chia seeds
1 scoop protein powder (I used Plant Well Vanilla Chai )
½ cup filtered water
½ cup frozen raspberries (for topping)
2 tbsp low-fat Greek yogurt / or coconut yogurt (for dairy free option)
Instructions:
- Preheat your oven to 180°C (350°F) and lightly grease a baking dish (approx. 8x8 inch)
- In a baking dish or bowl, combine oats the milk of choice, chia seeds, nut butter; chocolate chips protein powder + filtered water. Whisk in the protein powder until smooth and combined.
- Let the mixture sit for 5–10 minutes so the chia seeds can start absorbing the liquid, this helps with texture.
- Evenly sprinkle the frozen rasberries on top.
- Bake for 30–35 minutes, or until the top is golden and the oats are set.
- Let cool slightly before slicing into 6–8 squares. Serve warm or cold with 2 tbsp of low-fat Greek yogurt on top.
